Description
For the winemaking process grapes are destemmed, fermentation in open top tanks with malolactic fermentation – after 3 weeks, the skins are pressed off and wine returns back to the tank to retain freshness, wine undergoes a gentle filtration before bottling.
Cicero V.3 was bottled with a small amount of dissolved Co2, to enhance the fruit forward flavours and to protect the wine from oxygen contact through the cork. This new wave style wine might have a slight spritz on opening as the co2 leaves the wine. It is perfectly normal!
